Hojicha Dukkah

Many people collect recipes on Pinterest or scroll through Instagram for culinary inspiration, yet feel daunted when it comes to recreating those stunning images in their own kitchens. One of the simplest ways to elevate both the flavor and visual appeal of your dishes is through garnishing. Whether it's a drizzle of grassy olive oil, a swipe of chili paste, or a sprinkle of freshly minced herbs, a thoughtful garnish can transform your food.

For me, a favorite go-to is a sprinkle of a spice mixture that adds crunch, texture, and a toasty, savory deliciousness. Enter Hojicha Dukkah. I developed this recipe using hojicha tea because of its unique flavor profile, featuring notes of toasted rice, caramel, and buttered toast. These flavors harmonize beautifully with the savoriness of sesame and the nutty, peppery essence of cumin.

This versatile garnish will not only enhance the taste but also add a sophisticated touch to any dish, making it look and feel gourmet with minimal effort. 


INGREDIENTS

  • 2 Tbsp roughly chopped pistachios

  • 1 Tbsp sesame seeds, can be a mix of black and white

  • 1 tsp hojicha tea

  • 1 tsp whole coriander

  • 1 tsp whole cumin

  • ¼ tsp kosher salt

DIRECTIONS

  1. Heat a medium sized pan over medium flame. Add pistachios, sesame seeds, tea, coriander, cumin and lightly toast for 2-3 minutes until the mixture smells fragrant and toasty. Set aside to cool for a few minutes.

  2. Transfer spices to a mortar and pestle, spice grinder or food processor. Process/pound until the mixture looks similar to coarse sand. Mix in salt and sprinkle over roasted vegetables.
